Yin-Strengthening Barley Water with Figs, Cinnamon and Cacao

Ingredients:
100 g barley
2 liter water
5 dried figs
1 cinnamon stick
1 clove
A small piece of freshly grated ginger
A pinch of salt
A pinch of cocoa powder
Zest of half a lemon
Instructions:
Soak the barley in water for 5 hours.
Drain the barley and place it in a pot with 2 liters of fresh water. Add the dried figs, cinnamon stick, clove, grated ginger, salt, cocoa powder, and lemon zest.
Let the mixture simmer gently, covered, for 2 hours.
Strain the hot barley water and enjoy.
Serving Suggestion:
Barley water can be enjoyed hot or chilled. The leftover barley can be used to make a delicious sweet salad!
