Yin-Strengthening Barley Water with Figs, Cinnamon and Cacao

Ingredients:

  • 100 g barley

  • 2 liter water

  • 5 dried figs

  • 1 cinnamon stick

  • 1 clove

  • A small piece of freshly grated ginger

  • A pinch of salt

  • A pinch of cocoa powder

  • Zest of half a lemon

Instructions:

  1. Soak the barley in water for 5 hours.

  2. Drain the barley and place it in a pot with 2 liters of fresh water. Add the dried figs, cinnamon stick, clove, grated ginger, salt, cocoa powder, and lemon zest.

  3. Let the mixture simmer gently, covered, for 2 hours.

  4. Strain the hot barley water and enjoy.

Serving Suggestion:

Barley water can be enjoyed hot or chilled. The leftover barley can be used to make a delicious sweet salad!
